Omlette - Fast, But Tasty

Pushed for time, fridge is bare, but you want something tasty? A couple of eggs, leftover veggies, jamon serrano and cheese and in 5 minutes you'll be chomping into a great omlette!

























Ingredients (per person/omlette)
  • 2 large eggs
  • 1/4 tomato
  • 1/4 onion
  • 1/4 red pepper
  • 3 tbs grated cheese
  • slice or two of jamon serrano (or other ham)
  • butter
  • dried chinese pork to garnish

Instructions

1. Finely chop the vegetables. Remove seeds from the tomato - otherwise omlette will be too liquidy.










2. Finely chop the jamon serrano slices









3. Heat butter in a small frying pan and add the vegetables and jamon. Cook for a couple of minutes until pepper and onion are softened.










4. Beat eggs and add to the pan.










5. As eggs cook, raise the edge and tip the pan so that the uncooked egg runs underneath the omlette. Repeat until the uncooked egg is no longer runny (liquid).













6. Add the cheese and carefully fold over.











7. Serve with a warm roll and dried chinese pork.
